Lime and Raspberry Posset


  • 2.4l Kerrymaid Savoury & Dessert Topping
  • 800g caster sugar
  • 12 tbsp lime juice plus the zest of 2-3 limes
  • 12 tbsp raspberry puree
  • Punnet of strawberries
  • 8 tbsp freeze-dried raspberries
  • Zest 1 lime
  • 40 shortbread biscuits


  1. Pour the Kerrymaid Savoury & Dessert Topping and sugar into a saucepan and bring to the boil
  2. Once boiling, simmer, while stirring for three minutes. Turn off the heat before adding the lime juice, zest and raspberry puree
  3. Pour the mixture into glasses and chill for two hours, or overnight until set
  4. Once set, make the crumb by blitzing the freeze-dried raspberries, the lime zest and four of the shortbreads to a fine crumb
  5. Sprinkle on top of each posset and serve with a shortbread on the side
