White Chocolate and Lime Cheesecake


  • 900g cream cheese
  • 750g mascarpone cheese
  • 1L Kerrymaid Savoury & Dessert Topping
  • 900g Orley White Chocolate
  • 1.5kg crushed biscuit
  • 200g butter, melted
  • 250ml white sugar
  • 30mg lime zest


  1. Add melted butter to crushed biscuits and press into pre prepared cake tins
  2. Place into fridge and allow to rest for 30 minutes
  3. Melt the chocolate in a glass bowl over boiling water
  4. Allow chocolate mixture to cool slightly
  5. Mix the cheeses together along with the Kerrymaid Savoury & Dessert Topping and whisk until fluffy. Allow the mixture to be at room temperature and then fold in warm chocolate until well combined
  6. Pour mixture over biscuit base and place back into the fridge to set for 30 minutes
  7. Garnish with lime zest
